Shortbread

Easy Vegan Shortbread Recipe:


Prep Time: 5 minutes
Time in Fridge (Dough): 30 minutes
Cook Time: 15 minutes
Cool Time: 10 minutes
Yields: 20


Ingredients:

  • 200g dairy free butter
  • 300g plain flour (sifted)
  • 100g vegan caster sugar (not all sugar is vegan)
  • 2 tbsp. vegan vanilla extract

Method:

  1. With a fork, separate the butter out
  2. Then use your hands to kneed the dough until all of the mixture is in a ball – if the dough is stifling to bind together (will take a few minutes of kneading), then add a little more butter
  3. Pop the dough in the fridge (in a bowl sealed with cling film) for at least half an hour to harden
  4. Roll the dough out with a rolling pin (use flour so it doesn’t stick) until about 1/2 cm thick
  5. Use a cookie cutter to cut into circle shortbread cookies (I plaited mine, but takes a little longer to cook)
  6. Sprinkle with a little extra caster sugar if desired
  7. Cook for ~12-15 minutes until cookies are firm (200*C fan oven)
  8. Cool for at least 10 minutes and enjoy! (I also dipped mine in dark chocolate)
