Tomato Toast

Tomato Toast – Vegan ‘French Toast’ Recipe:


Time to Make: 5 minutes
Yields: 4 Pieces


Ingredients:

  • 4 pieces of bread – whatever kind you like
  • 400g cherry tomatoes in a can (with juice) – it can be normal tomatoes but I feel cherry has a little more of a rich flavour
  • Little splash of reduced salt soy sauce (1-2 tbsp.)
  • Garlic powder, mixed herbs and black pepper to season
  • Extra virgin olive oil or vegan butter or coconut oil (or similar) to fry the toast

Method:

  1. Blend the tomatoes, soy sauce, garlic powder, herbs and black pepper together until it forms a smooth liquid
  2. Pour the liquid into a dish and dip the bread in it – I let mine soak for about 1 minute to make it more tomato-y (make sure both sides are covered)
  3. Repeat step 2 for all pieces of bread
  4. Heat some oil (or whichever you decided to use) in a frying pan and fry the bread until each side has browned/crisped a little
  5. Enjoy!
