Vegan Scrambled Tofu Recipe:
Time to Make: 10 minutes
Yields: 2 large/4 small side portions
Ingredients:
- 400g of tofu (drained – I used firm tofu, but silken will also work)
- 1 tbsp. turmeric
- 2 tbsp. cumin
- 1 tbsp. garlic powder
- 1 tbsp. onion powder
- 1 tbsp. reduced salt soy sauce
- 1 tbsp. Swartz ‘Season-all’
- Salt and pepper as desired
Vegetables:
- 3 peppers – sliced
- Bunch of spring onions – sliced
- 100g mushrooms – sliced
- 100g cherry tomatoes – halved
Method:
- Scramble the tofu up into small uneven pieces, pop in a bowl and add the seasoning ingredients
- Mix completely and set to one side
- In the mean time, fry the vegetables (I fried in a little oil) for about 5 minutes until soft
- Add the tofu to the veggies and fry (stir often) for a further 5 minutes until it starts to crisp
- Serve and enjoy!
