Vegan Pulled BBQ Jackfruit Burger Recipe:
Prep Time: 5 minutes
Cook Time: 1 hour 30 minutes
Yields: (at least) 4 Burgers Worth
Ingredients:
- 2 cans (each 280g drained) of Jackfruit (in the UK you can buy from oriental supermarkets or Amazon)
- Burger buns (if you’re having as a burger – it’s also a perfect topper for jacket potatoes)
- 2 medium onions – chopped
- 3 cloves of garlic – chopped
- 400g can chopped tomatoes
- 60ml apple cider vinegar
- 3 tbsp. reduced salt soy sauce
- 2 tbsp. oregano
- 2 tbsp. maple syrup
- 2 tbsp. English mustard (reduce for less of a kick)
- 2 tbsp. black pepper
- 1 tbsp. balsamic vinegar
- Pinch of salt
Method:
- Drain the jackfruit and cut off the core from each piece (this is the harder section in the middle of it – it’s too tough to be pulled)
- Fry the onions and the garlic until golden brown
- Add the chopped tomatoes, garlic, onions and oregano to a blender and blend into a paste (doesn’t have to be completely smooth)
- In a large pan add the jackfruit, the tomato ‘paste’ and the rest of the ingredients and stir
- Leave on a low heat (I had mine on 1 out of 6) for an hour and a half with a lid on, stir every 20 minutes or so
- When cooked use two forks to pull the jackfruit (some will pull apart itself) apart
- Then place into a bun or onto a jacket and ENJOY!
