Mac ‘n’ Cheese

Easy Vegan Mac ‘n’ Cheese Recipe:

Prep Time: 5 minutes
Cook Time: 20 minutes
Yields: 4 portions


  • 250g macaroni (dried)
  • 1 medium onion diced
  • 30g golden breadcrumbs
  • 20g nutritional yeast
  • 250ml vegan milk – I used soya
  • 4 tbsp. vegan butter
  • 2 tbsp. flour
  • 1 tbsp. mixed herbs
  • 1 tbsp. garlic powder
  • 1 tbsp. (reduced salt) soy sauce
  • 1 tsp. black pepper
  • 1 tsp. salt
  • 1 tsp. smoked paprika


  1. Cook the macaroni as directed on the packet then drain and set aside
  2. Whilst the pasta is cooking, heat 2 tbsp. of ‘butter’ (on a low-medium heat) in a frying pan – when melted, stir in the breadcrumbs, herbs, garlic, pepper, salt and paprika and leave for 3-4 minutes to brown slightly, stirring regularly. Then remove from heat and set aside
  3. In a pan, melt the remaining 2 tbsp. of ‘butter’ then add the onions and fry for 2-3 minutes on a medium heat
  4. Next, turn down the heat and stir in the breadcrumb mix and flour and stir constantly until combined (it will stick!!)
  5. Pour in the milk (and soy sauce) in bit by bit and whisk until it thickens
  6. Add the pasta into the sauce and pour in the nutritional yeast, mix until thoroughly combined
  7. ENJOY!
