Greek Gyros

Vegan Greek Gyros with Tzatziki Recipe:

Prep Time: ~10 minutes
Cook Time: ~30 minutes
Yields: 4 Gyros

Gyros ‘Meat’ Ingredients:

  • 75g dried soya mince (I got mine from Tesco in the ‘whole food’ section, £2 for 12 servings!)
  • 250ml boiling water with 1 vegetable stock cube
  • 1/2 tsp. ground coriander
  • 1/2 tsp. ground cumin
  • 1/2 tsp. mild chilli powder (or hot if you like spice)
  • 1/2 tsp. smoked paprika
  • 1/2 tsp. dried oregano
  • 1/2 tsp. dried thyme
  • 1/4 tsp. garlic powder
  • 1/4 tsp. ground cinnamon
  • Salt and pepper
  • 1 tbsp. extra virgin olive oil to fry

Tzatziki Ingredients:

  • 90g soya yogurt (or other plant-based yoghurt)
  • 30g cucumber – grated
  • 1 tsp. extra virgin olive oil
  • 1 tsp. garlic powder
  • 1 tsp. lemon juice
  • 1/2 tsp. dried dill
  • Black pepper as desired

Flatbread Ingredients:

  • 350g plain flour
  • 325g soya yogurt (or other plant-based yoghurt)
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. smoke paprika
  • 1 tsp. oregano
  • Extra virgin olive oil to fry

Gyros ‘Meat’ Method:

  1. Add the mince, water and stock to a sauce pan, stir until thoroughly combined, then put on a low heat (mine was on 2 out of 6) on the hob for 15 minutes – make sure you stir regularly so it doesn’t stick
  2. After 15 minutes, transfer to a bowl and add all the seasonings (mix together separately before adding) and leave for 5 minutes to ‘infuse’
  3. Then, fry for about 5-10 minutes until the mince has crisped

Tzatziki Method:

  1. Mix all the ingredients together in a bowl – nice and simple!

Flatbread Method:

  1. Add all the ingredients in a bowl and mix/knead until a dough forms
  2. Then, split the dough into 4 balls
  3. On a floured surface, roll out the dough until about 1cm thick
  4. Heat up a little oil in a griddle pan, then fry the dough for about 3 minutes each side until golden

Assembly Suggestions:

  • Pack the flatbread full of ‘meat’ and tzatziki
  • When I have visited Greece in the past I have seen that they also added fries and salad – which also tastes delicious as this is what I did with mine
  • Then wrap it all up and enjoy!
