Fluffy Pancakes

Fluffy Vegan Pancakes Recipe:


Prep Time: 5 minutes
Cook Time: 10 minutes
Yields: 8 Pancakes


Ingredients:

  • 250ml soya milk (or other vegan milk)
  • 2.5 tsp. egg replacer (mine had to be mixed with 2.5 tbsp. water – check the instructions)
  • 120g rolled oats (ground into ‘flour’)
  • 20g white flour
  • 3 tbsp. sweetener (avoid artificial)
  • 2 tsp. baking powder
  • Oil/spray for frying

Method:

  1. ‘Beat’ the egg replacer and milk together, then pour into the dry ingredients (mix prior) and stir until combined – don’t over mix
  2. Heat a pan on a low-medium heat then add a little oil/spray (don’t be tempted to put it on high, they’ll rise a lot more and be very fluffy when on a lower heat)
  3. When the pan is up to temperature, add a few tablespoons of batter then leave for a few minutes
  4. As the batter starts to bubble, flip the pancake over and cook the other side and cook until browned
  5. Repeat until all the batter is used up
  6. Serve with all the toppings you want, then, enjoy!
