Vegan Sweet Potato Waffles Recipe:
Prep Time: 5 minutes
Cook Time: 30 minutes
Yields: 6 waffles
Ingredients:
- 2 medium sweet potatoes (weighing ~ 350g)
- 20ml almond milk (or other dairy free milk)
- 180g chickpea flour (or normal flour)
- 1 tbsp. Mixed herbs
- 1 tbp. Garlic powder
- 1 tsp. Onion powder
- Black pepper to taste
Method:
- Peel the potatoes and cut into small cubes and boil for ~20 minutes until soft
- Transfer the potatoes to a mixing bowl and mash, then add the soya milk and mix (herbs and salt/pepper can also be added at this point)
- Bit by bit add the flour and make sure you mix it thoroughly
- Pre-heat your waffle iron and spray with a non-stick spray (I use coconut spray)
- Add the mixture to your iron until golden, should take about 2-3 minutes (but will vary)
- Enjoy!
