Vegan Banana Pancakes Recipe:
Prep Time: 5 minutes
Cook Time: 10 minutes
Yields: 16
Ingredients:
- 60g ground porridge oats
- 60g plain flour
- 1 tsp. baking power
- 240ml soya milk
- 2 tsp. sweetener (avoid artificial sweeteners)
- 1 ripe banana
Method:
- Blend the banana and milk until smooth
- Add the rest of the ingredients and blend until all is mixed
- Heat a (non-stick) frying pan and add oil/spray to make sure the mix doesn’t stick (keep on a low-medium heat, it will make them rise more and become fluffier)
- Pour in some batter (about 25ml) and move the pan around to make sure the mix is quite thin
- Cook for about 2 minutes until bubbles appear (time may vary), flip over and cook for a further 30 seconds until all the mixture has solidified – transfer to a plate and repeat for the rest of the mixture
