Banana Pancakes

Vegan Banana Pancakes Recipe:


Prep Time: 5 minutes
Cook Time: 10 minutes
Yields: 16


Ingredients:

  • 60g ground porridge oats
  • 60g plain flour
  • 1 tsp. baking power
  • 240ml soya milk
  • 2 tsp. sweetener (avoid artificial sweeteners)
  • 1 ripe banana

Method:

  1. Blend the banana and milk until smooth
  2. Add the rest of the ingredients and blend until all is mixed
  3. Heat a (non-stick) frying pan and add oil/spray to make sure the mix doesn’t stick (keep on a low-medium heat, it will make them rise more and become fluffier)
  4. Pour in some batter (about 25ml) and move the pan around to make sure the mix is quite thin
  5. Cook for about 2 minutes until bubbles appear (time may vary), flip over and  cook for a further 30 seconds until all the mixture has solidified – transfer to a plate and repeat for the rest of the mixture
  6. Enjoy!
