Sticky BBQ Ribs

Vegan Sticky Seitan BBQ Ribs Recipe:


Prep time: ~5 minutes
Time to cook: ~30 minutes
Yields: 4 portions


Ingredients:

  • 140g vital wheat gluten
  • 200ml vegetable stock
  • 2 tbsp. nutritional yeast
  • 1 tbsp. smoked paprika
  • 2 tsp. onion powder
  • 1 tsp. garlic powder
  • 1 tsp. black pepper
  • 2 tbsp. reduced salt soy sauce
  • 4 tbsp. BBQ sauce of choice

Method:

  1. Pre-heat your oven to 180*C (fan-oven)
  2. In a big bowl, add the gluten, nutritional yeast, smoked paprika, onion and garlic powder and black pepper, then stir until thoroughly combined
  3. Add in the vegetable stock and soy sauce then start mixing it all together until a dough forms, then kneed it for a few minutes (if it’s still quite sticky add some more gluten)
  4. Line a baking tray with foil, then spread the dough out into a rectangular ‘rack of ribs’ shape (it should be about 1 cm thick)
  5. Then place in the oven for 25 minutes (flip over half way through)
  6. Transfer the seitan to a plate and spread 2 tbsp. of BBQ sauce on each side
  7. To finish off, either fry the seitan in a griddle pan with a little oil (a few minutes on each side should do it) or crisp it up on a BBQ until slightly charred
  8. Enjoy!
