Chickpea & Lentil Salad

Vegan Chickpea and Lentil Salad Meal Prep Recipe:


Prep Time: 5 minutes
Time to Make: 5 minutes
Fridge Time: (at least) 30 minutes
Yields: 3/4 portions


Ingredients:

  • 2 cans of chickpeas (480g drained)
  • 2 cans of green lentils (235g drained)
  • 100g cucumber (cut into small cubes)
  • 250g cherry tomatoes (quartered)
  • 2 sticks of celery (~70g)
  • 4 spring onions (chopped – ~85g)
  • Bunch of fresh parsley (chopped)
  • Bunch of fresh coriander (chopped)
  • 3 tbsp. cumin
  • 2 tbsp. olive oil
  • 2 tbsp. lemon juice
  • 1 tbsp. garlic powder
  • Salt & pepper to taste

Optional:

  • 60g olives
  • Falafel for extra calories

Method:

  1. Place all the ingredients in a bowl and mix thoroughly
  2. Then cover and place in the fridge for at least 30 minutes to infuse
  3. Split into 3 big portions or 4 smaller portions and pop in the fridge for your lunches or dinners
  4. Enjoy!
