Dirty Fries

Vegan Dirty Fries Recipe with Cheese Sauce and Paprika Seitan Chicken:


Prep time: ~ 15 minutes
Cook time: ~ 1 hour
Yields: 2 portions


Fries Ingredients:

  • 4/5 medium potatoes
  • 1 tbsp. extra virgin olive oil
  • 1 tbsp. paprika
  • 1 tsp. garlic powder
  • 1 tsp. onion powder

Seitan Chicken Ingredients:

  • 50g vital wheat gluten
  • 1 tbsp. nutritional yeast
  • 2 tbsp. smoked paprika
  • 1 tsp. (reduced salt) soy sauce
  • 1 tsp. garlic powder
  • 1 tsp. onion power
  • 50ml water
  • Extra virgin olive oil & 1 tsp. smoked paprika – for frying

Cheese Sauce Ingredients:

  • 2 medium potatoes (peeled and chopped into small cubes)
  • 1 small carrot (peeled and sliced thinly)
  • 1 tbsp. extra virgin olive oil
  • 120ml soya milk
  • 3 tbsp. nutritional yeast
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. paprika
  • 1 tsp. (reduced salt) soy sauce

Fries Method:

  1. Pre-heat the oven to 180*C (fan-oven)
  2. Cut the potatoes into fries shapes (however thick you wish) then add into an oven tray along with the other ingredients, and ensure the potatoes are covered
  3. Place in the oven for about 30-40 minutes until crisp, make sure you move them around every 10 minutes

Seitan Chicken Method:

  1. Combine all the seitan chicken ingredients (except the water) in a bowl a mix until combined, then add the water and knead until a dough-type mixture is formed
  2. Roll the dough into a ball then roll in some foil until covered and twist the ends to seal – then place the seitan in a steamer for 40 minutes (make sure you turn it over half way through)
  3. After 40 minutes, let the seitan cool for a couple of minutes, then cut it into small chunks (ready for frying)
  4. Heat the oil in a pan, then sprinkle in the 1 tsp. of smoke paprika and add the seitan and stir until covered – then fry for about 4/5 minutes until it’s all crisped

Cheese Sauce Method:

  1. Boil the potatoes and carrot in water until soft (~10-15 minutes)
  2. Then add to a food processor and blend with the rest of the ingredients until smooth and a sauce forms

Assembly:

  • Top the fries with cheese sauce, chicken and any other ingredients you want – we added spring onions and jalapeños too, then enjoy!
